I'm way too excited about this for somebody my age.
There are a lot of beets coming up. In fact, way more sprouts than seeds I planted?? Do "beet seeds" actually each have more than one seed in them? Am I going to have to figure out how to thin them earlier than I expected? Possibly I should have done more research than just reading the backs of the dollar-store seed packets.
There is also a bean that does not quite have any leaves showing but I can see the white neck of the sprout just under the soil, about to unfurl.

Beans sprouting are the best. I love the way they push the soil up.
Beets: no, it's just that a beet plant has multiple stems emerging from the one root. Have you ever seen a beet with its leaves on at the market? Like that.

Maybe the beet seeds were smaller (and thus more easily scattered) than you expected?

@neotoma beet seeds are actually largish! they're weird and alien looking up close, actually… I think they're awesome :) But of all the things to plant, they're one of the easiest not to accidentally drop 2 in the hole where 1 should be, because they have a rough surface that makes them grippable, and they're large enough to pick up individually. Here's a random pic via google images.
Hmm, I asked google about beet seeds and it says each of those alien spiky things actually has between 2 and 6 seeds in it? If that's right I'll probably end up thinning before I transplant to the actual garden. They're still at the only-two-leaves stage so I doubt it's that there are multiple stems per seed already, but I'm not in a hurry.
