Mitsuba Cryptotaenia japonica

A culinary herb which looks similar to flat-leaf parsley and can be used the same way, although it is best used raw as it may be bitter if cooked.

Mitsuba means 'three-leaves' in Japanese and the flavour resembles a mixture of parsley, celery and coriander - very refreshing. The leaves and stems are softer than parsley, and the roots and seeds all edible. The plant is high in vitamin C and calcium.
