Golden beets have gold rather than red taproots. The veins of their leaves are yellow rather than red. They have a sweeter, milder flavor than red beets. Like red beets, their leaves can be eaten and the roots are delicious shaved raw into salads or roasted.

  6. Lift the rest of the crop 6 weeks after first harvest
